The Luccis Go Vegan

A Statement by Silvia Lucci

When I was growing up in Argentina, my parents were poor but they worked hard to provide me with the best resources to grow strong and smart. The meat industry is huge there. I didn’t use a pacifier, I chewed a T-Bone. The formula was simple: meat equals protein, protein equals intelligence and strength. These concepts intrinsic to the culture of my home country also prevail in my adoptive country, USA.

At the age of 49, I suffered a stroke, which shook my life financially, healthily, and personally. At this time, my husband of 32 years, Daniel was also struggling with pre-diabetes and cholesterol. We decided to incorporate a plant-based diet to heal our family. Luckily, Daniel is a chef, so we felt up to the challenge!

How did I not know about this earlier? As Argentineans and later Americans, veganism was against everything we knew. It was hard to access the ingredients we needed, to change the way of cooking, to find simple foods. We were in a constant state of vigilance, reading every label and nutritional facts, some very well hidden, and when we finally found them they didn’t taste that good. In the past we created our meals around the meat we will use: chicken, beef, pork, fish, etc. The concept of protein absorption was ingrained deeply. After just a couple of weeks of a complete nutritional vegan diet, our bodies started showing us gratitude by making us feel more energetic, stronger, and even happier. It is needless to say that veganism rocked my world. We immersed ourselves in research and experimentation, and what we learnt will change my life forever.

LUHV Food was built on this belief: We can all change the world by the way we eat one bite at a time.We understand eating vegan, gluten free, and healthfully is not easy for most, which is why we need to make food that people crave and can afford. Health should not be the privilege of wealth nor an unsatisfying compromise. We deeply believe in making veganism stress-free, and pride ourselves to be part of a movement that will ensure the health of every person and the protection of our world for generations to come.
